This Stoneybatter café's nostalgic doughnuts sell out every week - here's how they do it

Mikado doughnut, anyone?

OVER THE PAST few months, Slice in Stoneybatter has been delighting Dubliners with their unique doughnut creations.

As part of Durty Donut Thursday, they release a doughnut inspired by a chocolate bar or biscuit. Previous offerings have included a 99 Doughnut, Brunch Doughnut and Romantica Doughnut.

Today’s doughnut is inspired by the humble Mikado.

As you can see, the doughnut is topped with coconut buttercream and filled with stewed berries. The resemblance between it and the biscuit is uncanny. 

Ray O’Neill of Slice tells DailyEdge.ie that he and head chef Sarah O’Leary brainstorm every week to come up with a new doughnut creation.

At the moment we are going through our “chocolate bars and classic biscuits” theme. Some weeks we will put a poll up on Facebook to find out what people’s favourites are, which is always fun.

He acknowledges that the doughnut scene in Dublin is exploding at the moment, which just gives them more impetus to try new and exciting things. “We’ve come a long way from the classic jam filling or the ring doughnuts with chocolate frosting,” he says. “People are expecting more from their doughnuts nowadays and we’re here to help!”

O’Neill says the doughnuts sell out most weeks by about lunchtime. The café also does office deliveries. (Hint, hint.)

So, what has the most popular doughnut been so far? O’Neill says that customers have asked about the Loop The Loop one over and over again.

Probably the most popular one of all was the Loop The Loop – pineapple and lime curd filling with melted chocolate on top. This was the only one that we made twice due to people asking us over and over again to bring it back.
